François is a young, brilliant winemaker who gave us a masterclass on innovations in vineyard managment during our walk around his beautifull hillside vineyards. We talked about nursery pruning, grafting, varieties, co-plantation, soil health. The walk was nearly as impressive as the tasting. At the moment, he's sort of split in two. Domaine des Fables is all fruit from his own vineyards vinified in his cellar. He's also buying grapes for a project, Maudit Flacon, which is a sort of temporary addendum to Domaine des Fables. In other words, all the wines made from purchased grapes he plans to make with his own fruit. He's buying vineyards, leasing, taking over leases... slowly, slowly filling out what was a very high concept winery. He knows exactly the kinds of cuvees he wants to make, and with each and every one has executed something remarkable. So very happy to be bringing you these amazing wines. 

The Domaine des Fables, created in 2019, is located on the slopes of Chautagne (Savoie), near the Rhone and the Lac du Bourget. The soils are composed of sandstone and limestone scree, the vineyard benefits from a south-western exposure and a climate tempered by the Lake of Bourget and the Rhone. In this setting, the vineyard plots are surrounded by woods, streams and meadows. The estate has been converted to organic farming and biodynamic practices. The search for balance and richness in biodiversity guides François Gilles’ work which extends to the cellar. All the fermentations are spontaneous and the maturation guided by the stars.

2021

IGP Des Allobroges "Poison Ivy"

VARIETY : Jacquère

TERROIR : 25 years
sandstone molasse
400m in altitude.

HARVEST :  hand picked

VINIFICATION : 50% direct pressing, followed by half-mid casking, fermentation and ageing on lees.
50% maceration for 15 days on whole bunches, pressing, then ageing on lees in demi-muid.

Vdf "Chatawak"

VARIETY : 85% Gamay / 15% Jacquère

TERROIR : Sandstone and Limestone scree on a slope.
Vineyard plots surrounded by woods, streams and meadows, including Lac du Bourget & Rivière du Rhône.
Gamay 20 years old on Moraine at 350m in altitude.
Jacquère 25 years old on sandstone molasse at 400m in altitude.
Biodynamic and organic practices.

HARVEST :  hand picked

VINIFICATION : 5-day vinification: 42.5% Gamay whole bunches soaked in 42.5% Gamay direct press.
Blended with 15% Jacquère direct press. Aged in concrete vat on lees.

 

IGP Des Allobroges "Gamabumba"

VARIETY : Gamay

TERROIR : Pays de Gex.
35 and 25 year old vines.
Sandstone molasse.
300m and 350m in altitude.

HARVEST :  hand picked

VINIFICATION : 15 days maceration 50% whole bunches / 50% destemmed.
Aged in concrete tanks on lees

VARIETY : Gamay

TERROIR : Pays de Gex. 35 year old vines.
Sandstone molasse.
300m and 350m in altitude.

HARVEST :  hand picked

VINIFICATION : 25 day maceration in whole bunches.
Aged 10 months in Bordeaux barrels on lees.

IGP Des Allobroges "Les Astres Invisibles 2021"

VARIETY : Mondeuse

TERROIR : Pays de Gex. 35 year old vines. Coarse sand on sandstone molasse on hillsides and terraces. Altitude: 300m
Biodynamic and organic practices.

HARVEST :  hand picked

VINIFICATION : 10 days maceration 50% whole bunches / 50% destemmed.
Aged 10 months in Burgundy barrels on lees.

Chatawak 2020

VARIETY : 85% Gamay / 15% Jacquère

HARVEST :  hand picked

VINIFICATION : 50% whole bunches of Gamay. 6 day maceration. Direct Press of the remaining Gamay with the Jacquère. Blended at bottling.
Aged in concrete.

Les Astres Invisibles 2020

VARIETY : Mondeuse

VINIFICATION : 50% de-stemmed grapes and 50% whole bunches.
Aged for 9 months in Burgundy barrels.

Gamabumba 2020
